  • 1 and 1/2 teaspoons ground cinnamon
  • 3/4 cup canola oil
  • 4 large eggs
  • 1 and 1/2 cups packed light brown sugar
  • 1 (8-ounce) can crushed pineapple (drained)
  • 3 cups grated carrots
  • 3/4 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, and any other dry spices.
  3. In another bowl, combine canola oil, brown sugar, and eggs until smooth. Stir in the drained pineapple.
  4. Fold the grated carrots and chopped walnuts into the wet mixture.
