Ingredients
- 1 lb chicken breast (diced)
- 2 tbsp olive oil
- 2 garlic cloves (minced)
- 1/2 cup soy sauce
- 1/3 cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1.5 cups cooked rice
- 1 cup pineapple chunks
- 1/2 red bell pepper (diced)
- Chopped green onions (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat. Add diced chicken and sauté until cooked through. Remove from the skillet.
- In the same skillet, sauté minced garlic until fragrant. Add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir to combine.
- Mix cornstarch with water to create a slurry and add to the sauce; cook until thickened.
- Return the chicken to the skillet along with pineapple chunks and diced bell pepper; stir to combine.
- Add cooked rice and mix until well combined; heat through.
- Garnish with chopped green onions before serving.
