  • 1 lb chicken breast (diced)
  • 2 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • Chopped green onions (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced chicken and sauté until cooked through. Remove from the skillet.
  2. In the same skillet, sauté minced garlic until fragrant. Add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir to combine.
  3. Mix cornstarch with water to create a slurry and add to the sauce; cook until thickened.
  4. Return the chicken to the skillet along with pineapple chunks and diced bell pepper; stir to combine.
  5. Add cooked rice and mix until well combined; heat through.
  6. Garnish with chopped green onions before serving.
