  • 1 medium pineapple
  • 1 ½ lbs boneless skinless chicken breasts
  • ½ tsp Salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks (from the pineapple boats)
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar
  • 2 tsp cornstarch
  • 3 garlic cloves (minced)
  • 2 cups cooked rice
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Cut the pineapple in half lengthwise and scoop out the flesh, reserving one cup of chunks.
  2. Season chicken pieces with salt and pepper in a bowl.
  3. Heat oil in a large skillet over medium heat; add chicken and cook until browned (5-7 minutes).
  4. In a separate bowl, whisk together soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, garlic, and reserved pineapple.
  5. Pour the mixture over the cooked chicken and simmer for about 5 minutes until thickened.
  6. Serve the chicken mixture in pineapple boats over cooked rice.
