Ingredients
- 1 medium pineapple
- 1 ½ lbs boneless skinless chicken breasts
- ½ tsp Salt
- ¼ tsp ground black pepper
- 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
- 1 cup pineapple chunks (from the pineapple boats)
- ¼ cup soy sauce
- ¼ cup water
- 3 Tbsp brown sugar
- 1 tsp ginger powder
- 3 Tbsp rice vinegar
- 2 tsp cornstarch
- 3 garlic cloves (minced)
- 2 cups cooked rice
- 1 green onion (chopped)
- ½ tsp sesame seeds
Instructions
- Cut the pineapple in half lengthwise and scoop out the flesh, reserving one cup of chunks.
- Season chicken pieces with salt and pepper in a bowl.
- Heat oil in a large skillet over medium heat; add chicken and cook until browned (5-7 minutes).
- In a separate bowl, whisk together soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, garlic, and reserved pineapple.
- Pour the mixture over the cooked chicken and simmer for about 5 minutes until thickened.
- Serve the chicken mixture in pineapple boats over cooked rice.
