For the Casserole Base:
1 1/2 cups long grain white rice
2 cans cream of chicken or mushroom soup
1 cup water
2 cups milk
1 envelope onion soup mix

For the Protein:
3 boneless skinless chicken breasts (or thighs)

For Topping:
1 1/2 cups shredded cheddar cheese
Salt and black pepper, to taste

Instructions

  • Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
  • In a large bowl, mix together the rice, cream of soup, water, milk, and onion soup mix until well combined.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Season the chicken with salt and pepper, then place it on top of the rice mixture.
  • Cover the dish tightly with foil and bake for 1 hour.
  • Remove the foil, sprinkle the shredded cheddar cheese evenly over the top.
  • Return to the oven and bake uncovered for an additional 15–20 minutes, until the cheese is melted and bubbly and the chicken is fully cooked.
