- 3 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tsp salt
- 2 ¼ tsp active dry yeast
- 1 cup cold unsalted butter
- ¾ cup cold milk or water
- 1 cup ground pistachios
- ½ cup powdered sugar
- ¼ cup almond flour
- 1 egg
- 2 tbsp crushed pistachios
- 2 tbsp honey or simple syrup (optional)
Instructions
- In a mixing bowl, combine the flour, sugar, salt, and yeast. Mix in cold milk until a dough forms.
- Incorporate cold butter by slicing it into thin layers and folding it into the dough. Chill for at least 1 hour.
- Roll out the dough into a rectangle and fold into thirds. Rotate and repeat this process for flaky layers, chilling between folds.
- For the pistachio filling, mix ground pistachios, powdered sugar, almond flour, softened butter, an egg, and vanilla extract until smooth.
- Roll out the laminated dough to about ¼ inch thick and cut into triangles. Place filling on the wide end of each triangle and roll into crescent shapes.
- Allow croissants to rise at room temperature for about 1 to 1.5 hours until puffed.
- Brush with egg wash, sprinkle with crushed pistachios, and optionally glaze with honey before baking at 375°F (190°C) for 18 to 22 minutes until golden.
