  • 3 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp active dry yeast
  • 1 cup cold unsalted butter
  • ¾ cup cold milk or water
  • 1 cup ground pistachios
  • ½ cup powdered sugar
  • ¼ cup almond flour
  • 1 egg
  • 2 tbsp crushed pistachios
  • 2 tbsp honey or simple syrup (optional)

Instructions

  1. In a mixing bowl, combine the flour, sugar, salt, and yeast. Mix in cold milk until a dough forms.
  2. Incorporate cold butter by slicing it into thin layers and folding it into the dough. Chill for at least 1 hour.
  3. Roll out the dough into a rectangle and fold into thirds. Rotate and repeat this process for flaky layers, chilling between folds.
  4. For the pistachio filling, mix ground pistachios, powdered sugar, almond flour, softened butter, an egg, and vanilla extract until smooth.
  5. Roll out the laminated dough to about ¼ inch thick and cut into triangles. Place filling on the wide end of each triangle and roll into crescent shapes.
  6. Allow croissants to rise at room temperature for about 1 to 1.5 hours until puffed.
  7. Brush with egg wash, sprinkle with crushed pistachios, and optionally glaze with honey before baking at 375°F (190°C) for 18 to 22 minutes until golden.
