  • 7/8 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 2 cups all-purpose flour
  • 1/2 cup milk
  • 2 cups finely chopped strawberries
  • 1/4 cup melted unsalted butter for topping
  • 1/2 cup brown sugar for topping
  • 1/3 cup sugar for topping
  • 1 tsp cinnamon for topping
  • 3/4 cup flour for topping
  • 1/4 tsp ground nutmeg for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with muffin papers.
  2. In a mixing bowl, cream together butter and sugars until smooth. Add eggs one at a time, blending well after each addition, then stir in vanilla.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually incorporate this into the wet mixture while alternating with milk.
  4. Gently fold in the chopped strawberries until evenly distributed.
  5. For the crumble topping, mix melted butter with brown sugar, granulated sugar, flour, cinnamon, and nutmeg until crumbly.
  6. Fill muffin cups two-thirds full with batter and generously sprinkle crumble topping on each.
  7. Bake for about 15 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool slightly before transferring to a wire rack.
