Ingredients
- 5/8 cup unsalted butter
- 7/8 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- 2 cups all-purpose flour
- 1/2 cup milk
- 2 cups finely chopped strawberries
- 1/4 cup melted unsalted butter for topping
- 1/2 cup brown sugar for topping
- 1/3 cup sugar for topping
- 1 tsp cinnamon for topping
- 3/4 cup flour for topping
- 1/4 tsp ground nutmeg for topping
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with muffin papers.
- In a mixing bowl, cream together butter and sugars until smooth. Add eggs one at a time, blending well after each addition, then stir in vanilla.
- In another bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually incorporate this into the wet mixture while alternating with milk.
- Gently fold in the chopped strawberries until evenly distributed.
- For the crumble topping, mix melted butter with brown sugar, granulated sugar, flour, cinnamon, and nutmeg until crumbly.
- Fill muffin cups two-thirds full with batter and generously sprinkle crumble topping on each.
- Bake for about 15 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before transferring to a wire rack.
