- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup old-fashioned rolled oats
- About 12 ounces raspberry preserves
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil and spray.
- In a microwave-safe bowl, melt the butter. Mix in granulated sugar, brown sugar, and vanilla until combined.
- Stir in flour, oats, and optional salt until crumbly; reserve one heaping cup for topping.
- Press remaining mixture into the pan evenly to form the crust.
- Spread raspberry preserves over the crust evenly.
- Sprinkle reserved crumble on top and bake for 30-32 minutes until golden brown.
- Cool for at least two hours before slicing into bars.
