Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 22 oz raspberries (fresh or frozen)
- 1 cup unsalted butter
- 1 lb mascarpone cheese
- 1 cup whipping cream (cold)
- Ladyfingers
Instructions
- Prepare the raspberry curd by cooking raspberries, sugar, lemon juice, and water in a saucepan until thickened. Strain and let cool.
- Beat eggs, sugar, and salt until pale. Melt butter and combine with egg mixture. Gently fold in mascarpone and whipping cream.
- Dip ladyfingers into the cooled raspberry mixture; layer them in a dish. Spread half of the cream mixture and raspberry curd over the ladyfingers. Repeat layering.
- Cover and chill for at least 4 hours or overnight before serving.
