  • 22 oz raspberries (fresh or frozen)
  • 1 cup unsalted butter
  • 1 lb mascarpone cheese
  • 1 cup whipping cream (cold)
  • Ladyfingers

Instructions

  1. Prepare the raspberry curd by cooking raspberries, sugar, lemon juice, and water in a saucepan until thickened. Strain and let cool.
  2. Beat eggs, sugar, and salt until pale. Melt butter and combine with egg mixture. Gently fold in mascarpone and whipping cream.
  3. Dip ladyfingers into the cooled raspberry mixture; layer them in a dish. Spread half of the cream mixture and raspberry curd over the ladyfingers. Repeat layering.
  4. Cover and chill for at least 4 hours or overnight before serving.
