  • 1 cup fresh pineapple chunks
  • 8 small corn or whole wheat tortillas

  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1 tbsp lime juice (for salsa)
  • Salt to taste (for salsa)
  • 1 avocado, sliced or diced

Instructions

  1. In a large mixing bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper.
  2. Add chicken pieces to the marinade and toss until evenly coated. Let marinate for at least 15 minutes.
  3. While marinating, mix diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a small bowl to create salsa.
  4. Heat a skillet over medium-high heat and cook marinated chicken for 5-7 minutes until golden brown and cooked through.
  5. Warm tortillas in a skillet or microwave until soft.
  6. Assemble tacos by layering chicken, pineapple chunks, salsa mixture, avocado slices, and cheese if desired. Serve with fresh lime wedges.
