Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup fresh pineapple chunks
- 8 small corn or whole wheat tortillas
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1 small jalapeño, seeded and finely chopped (optional)
- 1 tbsp lime juice (for salsa)
- Salt to taste (for salsa)
- 1 avocado, sliced or diced
Instructions
- In a large mixing bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper.
- Add chicken pieces to the marinade and toss until evenly coated. Let marinate for at least 15 minutes.
- While marinating, mix diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a small bowl to create salsa.
- Heat a skillet over medium-high heat and cook marinated chicken for 5-7 minutes until golden brown and cooked through.
- Warm tortillas in a skillet or microwave until soft.
- Assemble tacos by layering chicken, pineapple chunks, salsa mixture, avocado slices, and cheese if desired. Serve with fresh lime wedges.
