These no-bake protein balls are inspired by Samoa cookies, combining coconut, chocolate, dates, and almond butter for a chewy, naturally sweet snack. They’re packed with protein and perfect for meal prep or quick energy bites.

Ingredients

Dry Ingredients:
1/4 cup shredded coconut
3 tablespoons shredded coconut (divided)
1/2 cup old-fashioned rolled oats
1 scoop vanilla protein powder (or unflavored)
1/4 teaspoon kosher salt
1 tablespoon chia seeds

Wet Ingredients:
1/2 cup creamy almond butter
3 tablespoons pure maple syrup
2 large Medjool dates, pitted (soft)
1 teaspoon vanilla extract
Toppings:
1 tablespoon mini chocolate chips
Flaky sea salt, for sprinkling
1/2 cup chocolate chips
1/2 teaspoon coconut oil

Instructions

  • In a food processor, blend the Medjool dates until they form a sticky paste.
  • Add almond butter, maple syrup, and vanilla extract. Blend again until smooth.
  • Add oats, protein powder, salt, chia seeds, and shredded coconut (minus the reserved 3 tablespoons). Pulse until a thick dough forms.
  • Fold in mini chocolate chips.
  • Scoop and roll the mixture into small balls using your hands.
  • Place remaining shredded coconut on a plate and roll each ball lightly in it.
  • Chill the protein balls in the refrigerator for 20–30 minutes to firm up.
  • Melt chocolate chips with coconut oil in the microwave in short intervals, stirring until smooth.
  • Drizzle or dip the chilled balls in chocolate, then sprinkle with flaky sea salt.
  • Let set in the fridge before serving.
