  • 2 large chicken breasts
  • 1 (10 ounce) can Ro-tel diced tomatoes & green chilies (drained)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1/2 medium onion (chopped)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt & pepper (to taste)
  • 1 cup Mexican cheese blend
  • Fresh cilantro (chopped, optional, to taste)

Instructions

  1. Preheat your oven to 400°F.
  2. Cut chicken breasts in half lengthwise and season both sides with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken cutlets for 3-4 minutes on each side until golden. Remove from skillet.
  4. Sauté chopped onion in the same skillet for about 5 minutes until softened.
  5. Add Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
  6. Return chicken to the skillet and top with the mixture and cheese.
  7. Bake for 5-7 minutes until chicken reaches an internal temperature of 165°F and cheese is melted.
