  • 1 lb boneless chicken breast
  • 2 cups mushrooms, halved
  • 1 clove garlic, minced
  • 1 1/2 cups dry white apple vinegar
  • 1/2 cup seasoned flour
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Fresh thyme sprigs

Instructions

  1. Pound chicken breasts between wax paper until about 1/4 inch thick; cut into smaller pieces.
  2. Heat butter and olive oil in a skillet over medium heat.
  3. Dredge chicken in seasoned flour and sauté until golden brown (about 5 minutes per side). Set aside.
  4. In the same skillet, sauté mushrooms and garlic until browned.
  5. Deglaze with apple vinegar and add bruised thyme.
  6. Return chicken to the pan; cover and simmer for 15-20 minutes.
  7. Remove chicken; stir in heavy cream and asiago until melted and thickened.
  8. Return chicken to warm it through before serving.
