- 1 lb boneless chicken breast
- 2 cups mushrooms, halved
- 1 clove garlic, minced
- 1 1/2 cups dry white apple vinegar
- 1/2 cup seasoned flour
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- 1/3 cup shredded asiago cheese
- Fresh thyme sprigs
Instructions
- Pound chicken breasts between wax paper until about 1/4 inch thick; cut into smaller pieces.
- Heat butter and olive oil in a skillet over medium heat.
- Dredge chicken in seasoned flour and sauté until golden brown (about 5 minutes per side). Set aside.
- In the same skillet, sauté mushrooms and garlic until browned.
- Deglaze with apple vinegar and add bruised thyme.
- Return chicken to the pan; cover and simmer for 15-20 minutes.
- Remove chicken; stir in heavy cream and asiago until melted and thickened.
- Return chicken to warm it through before serving.
