  • 1 pound ground chicken sausage
  • 1 small sweet Vidalia or yellow onion (diced small)
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon salt (or to taste)

  • 3 or 4 garlic cloves (finely minced or pressed)
  • One 28-ounce can crushed tomatoes with juice
  • 4 large eggs
  • 1 to 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground chicken sausage, diced onions, smoked paprika, salt, and pepper. Cook for about 8 minutes until the sausage is thoroughly cooked and onions are golden.
  2. Stir in minced garlic and cook for 1 minute until fragrant. Then add crushed tomatoes with their juice and simmer for 3 to 5 minutes until slightly thickened.
  3. Crack eggs evenly around the skillet into the sauce. Cover and cook for approximately 5 minutes until the eggs are set to your liking.
  4. Garnish with fresh parsley before serving warm.
