- 1 pound ground turkey sausage
- 1 small onion (diced)
- 3–4 garlic cloves (minced)
- One 28-ounce can crushed tomatoes
- 4 large eggs
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Cook ground turkey sausage, diced onion, smoked paprika, salt, and pepper for about 8 minutes until cooked through.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in crushed tomatoes and simmer for 3-5 minutes until slightly thickened.
- Crack eggs evenly around the skillet on top of the sauce. Cover and cook for about 5 minutes or until eggs are set to your liking.
- Garnish with chopped parsley before serving.
