- ½ cup chopped onion
- 5 cloves garlic, minced
- 1.5 cups cooked corn kernels
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 cup half-and-half
- 4 oz feta cheese, crumbled
- Fresh cilantro and lime for garnish
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Sauté onions until translucent, then add garlic and cook until fragrant.
- Stir in corn, chili powder, smoked paprika, and salt; cook for about 3-4 minutes.
- Reduce heat to low; add half-and-half and half of the feta cheese, stirring gently.
- Increase heat back to medium; add shrimp and cook until pink and opaque (about 3-4 minutes per side).
- Remove from heat; finish with lime juice, remaining feta cheese, and fresh cilantro before serving.
