- 3 eggs
- 1 ⅛ cups sugar

- ⅓ cup Greek yogurt (plain)
- 1 large orange (washed and cut into pieces)
- 2 ½ oz fresh orange juice
- Optional: 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix eggs, sugar, and butter until creamy. Add Greek yogurt and blend until combined.
- Blend in chopped pieces of orange (with rind) until smooth.
- Whisk together flour and baking powder in another bowl; gradually combine with wet mixture.
- Pour batter into a greased 9-inch round cake pan and bake for about 55 minutes or until a toothpick comes out clean.
- Allow the cake to cool before serving.
