- 2 pounds beef chuck, cut into chunks
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 bell peppers, diced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping vegetables and cutting the beef into bite-sized chunks.
- In a skillet over medium-high heat, add olive oil and sear the beef until browned on all sides for enhanced flavor.
- Transfer the seared beef to a slow cooker and add the onions, garlic, carrots, bell peppers, beef broth, tomato paste, paprika, thyme, salt, and pepper.
- Cover and cook on low heat for 6-8 hours until the beef is tender.
- Stir well before serving and enjoy with noodles or bread.
