  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 tablespoon fruit juice or broth (instead of Worcestershire sauce)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine beef cubes with fruit juice or broth, salt, black pepper, Italian seasoning, and smoked paprika. Toss until evenly coated.
  2. Place halved baby potatoes at the bottom of the slow cooker and drizzle with half of the melted butter and olive oil. Add minced garlic over the potatoes.
  3. Layer seasoned beef cubes on top of the potatoes and drizzle with remaining melted butter and olive oil.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until beef is fork-tender and potatoes are cooked through.
  5. Gently stir before serving and garnish with fresh parsley.
