Ingredients
- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 tablespoon fruit juice or broth (instead of Worcestershire sauce)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1.5 pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 tablespoons olive oil
- 5 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large mixing bowl, combine beef cubes with fruit juice or broth, salt, black pepper, Italian seasoning, and smoked paprika. Toss until evenly coated.
- Place halved baby potatoes at the bottom of the slow cooker and drizzle with half of the melted butter and olive oil. Add minced garlic over the potatoes.
- Layer seasoned beef cubes on top of the potatoes and drizzle with remaining melted butter and olive oil.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until beef is fork-tender and potatoes are cooked through.
- Gently stir before serving and garnish with fresh parsley.
