- 1 1/2 cups dry short grain sushi rice
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 can (12 oz) chicken or beef (as a substitute for spam)
- 2 1/2 teaspoons soy sauce
- 2 tablespoons sugar
- 1/4 cup water
- 6 eggs
- 3 sheets roasted seaweed nori (cut into 2 inch wide strips)
Instructions
- Rinse the sushi rice until the water runs clear. Cook rice in a rice cooker with 2 cups of water.
- In a small mixing bowl, combine rice vinegar, sugar, and salt; stir into the cooked rice.
- Slice the chicken or beef into 1/4-inch thick pieces; cook in a skillet until crispy on both sides.
- Whisk eggs and cook in a skillet until set; roll tightly and slice into halves.
- Assemble musubi by layering rice, omelet, and chicken or beef on nori; wrap tightly.
