  • 1 cup chopped strawberries
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp milk
  • 1/2 cup chopped strawberries
  • 1 tbsp white sugar
  • 1 tbsp milk (+ 1/2 tbsp if needed)
  • 1 cup powdered sugar

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. 3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. 4. In another bowl, mix buttermilk, vanilla extract, and egg; add to dry ingredients and stir until just combined. Fold in chopped strawberries.
  5. 5. Turn dough onto a floured surface; shape it into an 8-inch circle and wrap it in plastic wrap. Freeze for 30 minutes.
  6. 6. After chilling, cut into triangles and place on the prepared baking sheet. Brush tops with milk.
