Ingredients
- 1 box strawberry cake mix
- 4 eggs
- 1 1/3 cup water
- 2/3 cup vegetable oil
- 3 oz box strawberry Jello
- 1 stick unsalted butter (softened)
- 7.5 oz vegan marshmallow fluff
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 4 tbsp heavy whipping cream
Instructions
- Preheat your oven to 350°F and prepare your bundt pan with non-stick spray.
- In a large bowl, combine the strawberry cake mix, eggs, water, vegetable oil, and strawberry Jello mix. Stir until smooth.
- Pour the batter into the bundt pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Cool the cake in the pan for about 10 minutes before transferring it to a cooling rack.
- For the filling, cream together softened butter and vegan marshmallow fluff until fluffy. Gradually mix in powdered sugar and vanilla extract, then add heavy whipping cream until creamy.
- Once cooled, create holes in the bottom of the cake using a small scoop and fill them generously with the cream filling.
- Flip onto a serving plate and dust with powdered sugar before serving.
