  • 1.5 lbs beef short ribs
  • 10 cups water
  • 1 whole yellow onion
  • 2 green onions or 1 Korean leek
  • 2 thick slices of ginger
  • 2 tablespoons chopped garlic
  • 1 tablespoon soy sauce
  • Sea salt to taste

Instructions

  1. In a large pot, add beef short ribs and cover with water.
  2. Add the yellow onion, green onions/leek, ginger, and bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low and let it simmer uncovered for about 90 minutes.
  4. Skim off any foam that forms on the surface occasionally.
  5. After simmering, stir in chopped garlic, soy sauce, and sea salt.
  6. Remove from heat and discard onion skins and ginger slices before serving.
