Ingredients
- 3 lbs goat meat
- ½ cup green seasoning
- 4–5 tbsp curry powder
- 1 Scotch bonnet pepper
- 2 medium potatoes (cubed)
- Fresh vegetables (onions, sweet peppers, garlic)
- Water (as needed)
- 2 tbsp Adobo
- 3 tbsp Complete Seasoning
- 3 tbsp Black Pepper
- 1 tbsp Jerk Seasoning
- 2 tbsp Onion Powder
- 1 tsp Cayenne Pepper
- 1 tsp Oregano
- 3 pegs Garlic
- 6 Pimento Seed (All Spice)
- 1/4 cup onion
- 1/4 cup sweet pepper
- 3 stems Thyme
- 2 tbsp Ginger
Instructions
- Wash goat meat in vinegar and water; rinse.
- Season meat with dry spices and marinate overnight.
- In a pot, sauté crushed garlic in water; add curry powder and pimento seeds.
- Brown the marinated meat thoroughly.
- Add water, chopped vegetables, and Scotch bonnet; cover and simmer for 2-3 hours.
- After 2 hours, add cubed potatoes; check liquid levels.
- Adjust seasoning before serving.
