  • 45 tbsp curry powder
  • 1 Scotch bonnet pepper
  • 2 medium potatoes (cubed)

  • Water (as needed)
  • 2 tbsp Adobo
  • 3 tbsp Complete Seasoning
  • 3 tbsp Black Pepper
  • 1 tbsp Jerk Seasoning
  • 2 tbsp Onion Powder
  • 1 tsp Cayenne Pepper
  • 1 tsp Oregano
  • 3 pegs Garlic
  • 6 Pimento Seed (All Spice)
  • 1/4 cup onion
  • 1/4 cup sweet pepper
  • 3 stems Thyme
  • 2 tbsp Ginger

Instructions

  1. Wash goat meat in vinegar and water; rinse.
  2. Season meat with dry spices and marinate overnight.
  3. In a pot, sauté crushed garlic in water; add curry powder and pimento seeds.
  4. Brown the marinated meat thoroughly.
  5. Add water, chopped vegetables, and Scotch bonnet; cover and simmer for 2-3 hours.
  6. After 2 hours, add cubed potatoes; check liquid levels.
  7. Adjust seasoning before serving.
