- 3 to 4 ripe bananas, mashed
- 1/2 cup melted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan.
- In a large mixing bowl, mash the ripe bananas thoroughly with a fork or potato masher.
- Mix in the melted butter until well combined. Then add sugar and mix until smooth.
- Incorporate the eggs one at a time, beating well after each addition, followed by the vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- If desired, gently fold in nuts.
- Pour batter into the prepared pan and tap gently on the counter to release air bubbles.
- Bake for 55 to 65 minutes until a toothpick inserted comes out clean.
