  • 2 turkey thighs
  • 3 cups rice
  • 3 cups water
  • 1 chicken seasoning cube
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon chili pepper
  • ½ teaspoon salt
  • A handful of chopped onion
  • 1 carrot (sliced)
  • 2 cloves garlic
  • ½ thumb-sized piece of ginger
  • ½ onion
  • ½ red bell pepper
  • ½ green bell pepper
  • red bell peppers
  • 2 large tomatoes
  • 1 habanero
  • 1 cup turkey broth
  • 1 tablespoon oil (for frying the turkey)
  • Onion (for sautéing)
  • 2 cloves garlic (minced)
  • Pinch of salt

Instructions

  1. Debone turkey thighs and cut into small pieces. Season with garlic powder, onion powder, paprika, chili pepper, chicken seasoning cube, and salt.
  2. In a large pot, simmer turkey bones with chopped onion, carrot, garlic, ginger, seasoning cube, salt, and water to create stock.
  3. Dice onion and blend bell peppers with tomatoes and habanero until roughly mixed.
  4. Rinse rice under cold water; cook with strained turkey stock and water until fluffy.
  5. Fry seasoned turkey pieces in oil until golden brown; set aside.
  6. Sauté onions and garlic in the same pan; add blended pepper mix and cook until fragrant.
  7. Combine fried turkey pieces and diced peppers into the pan; mix well with cooked rice before serving.
