Ingredients
- 1 pound chicken breast, cubed
- 1 yellow onion, diced
- 2 cups green chiles
- 2 cans great northern beans, drained
- 3 cups chicken broth
- 1½ cups corn, drained or frozen
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
- 1½ teaspoon cumin
- ½ teaspoon oregano
- ½ teaspoon chili powder
- ½ cup heavy cream
Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Sauté cubed chicken breast and diced onion until the chicken is cooked through.
- Add minced garlic and cook for an additional 30 seconds.
- Stir in green chiles, great northern beans, chicken broth, corn, salt, pepper, cumin, oregano, and chili powder. Mix well.
- Cover and simmer for about 20 minutes.
- Stir in heavy cream before serving.
- Serve hot with optional toppings like avocado or cilantro.
