Ingredients
- 2 chicken breasts (thawed and trimmed)
- 15 oz canned black beans (undrained)
- 15 oz canned corn (undrained)
- 10 oz canned Rotel tomatoes with green chiles (undrained)
- 8 oz cream cheese
- 1 oz taco seasoning
- 1 oz ranch seasoning mix
Instructions
- Place trimmed chicken breasts in the bottom of your Crock Pot.
- Add undrained black beans, corn, and Rotel tomatoes on top of the chicken.
- Sprinkle taco seasoning and ranch seasoning evenly over everything.
- Place cream cheese on top without mixing it in.
- Set the Crock Pot to LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- Once cooked, shred the chicken using two forks and stir well to incorporate the cream cheese.
- Serve hot with optional toppings like tortilla strips, shredded cheese, sliced avocados, lime juice, and cilantro.
